The Dish with Anita: Anita's pork rub

Posted: Updated:

(CBS 8) - Just in time for game day, this is a pork rub recipe that I have used for years. It's perfect for slow-cooked pork roasts or ribs.

This rub recipe is my favorite for pulled pork; it gives the meat a wonderful flavor without overpowering the natural flavor of the meat. If you are looking for a rub recipe without a lot of ingredients, I think you will find this one is perfect. Enjoy!

1/3 cup paprika

1/4 cup black pepper

1/4 cup brown sugar

2 tbsp sea salt

2 tbsp cumin

2 tsp dry mustard

2 tsp cayenne pepper

Mix all ingredients. Rub half of the mixture into meat 12-24 hours before meat is to be cooked. Apply the remaining rub before cooking.

Pulled Pork

Pre heat oven to 255 degrees.

Rinse and pat dry one 5 to 6 lb pork butt or shoulder roast and apply rub according to instructions above.

Slice two white onions in half across (trim bottoms of each half so they don't wobble) and place onions cut-side up in the bottom of Dutch oven or roasting pan.

Place prepared pork roast on top of sliced onions. Place Dutch oven or roasting pan into 255-degree pre-heated oven for 8 to 12 hrs (for best results I usually do this overnight).

Once roast is done remove from pot and place on a cutting board to rest for about 115 minutes before shredding with two forks or by hand. Serve with your favorite barbeque sauce or dry.
