The Dish with Anita: Basil oil

This basil oil is a great way to finish roasted vegetables or grilled fish. It's also great along side a good balsamic vinegar for dipping with rustic bread. Enjoy!

Ingredients:

1 3/4 cups olive oil

4 to 2 cups fresh basil leaves, cleaned

2 chopped cloves of garlic

Pinch of kosher

Fresh ground black pepper

Instructions:

Place olive oil, basil leaves and chopped garlic, salt and pepper in bowl of food processor. Pulse until basil is finely chopped. Pour over a fresh roasted vegetable medley such as red, orange and yellow bell peppers, eggplant, sweet red onion, zucchini and yellow squash.

Serve hot or warm and store leftover basil oil in the fridge for 3 to 4 days.
