Grilling with Styles: Grilled tropical fruit with honey yogurt sauce

Ingredients:

Mango

Pineapple

Plantain

Papaya


Instructions:

Select fruit that is almost ripe, you want it to be firm for the grill. Leave the skin on the half of the split plantains but peel the other fruits. Brush the side of the fruit that will be on the grill with canola oil and lightly season with salt and cayenne pepper LIGHTLY. Over hot coals grill the fruit 2 - 5 minutes, just long enough to caramelize the sugars in the fruit. Remove from heat, let cool and serve with vanilla ice cream or honey yogurt sauce.

 

Honey Yogurt Sauce

Ingredients:

2 cups vanilla yogurt
1/2 cup honey
Instructions:

Blend together and refrigerate for a least 1 hour before serving
