SAN DIEGO (CBS 8) - This pie is really great with fresh fruit and a drizzle of chocolate. Enjoy!
3 large eggs
1-14 oz can sweetened condensed milk (I recommend Eagle Brand)
1 1/4 cup hot water
1 tbsp melted butter
1 tsp vanilla
1/4 tsp salt
1/8 tsp nutmeg
Pre baked pie shell
Preheat oven to 400 degrees.
In a mixing bowl, beat eggs with the sweetened condensed milk. Stir in melted butter and hot water to egg mixture then add vanilla, salt and nutmeg.
Next pour the custard mixture into the pre-baked pie shell (make sure to place the pie pan on a baking sheet before filling, this will help to avoid spilling contents when placing into the oven). Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and bake for another 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
Cool on a rack for 30 minutes then chill in the refrigerator for 2 to 3 hours or overnight before topping with whipped cream and fresh berries (if desired) before serving. Enjoy!
*Use a store-bought pie crust like Ritz or Pillsbury baked pie shell according to instructions on package.
