The Dish with Anita: Deviled eggs with smoked salmon

SAN DIEGO (CBS 8) - No particular reason for this recipe other than I just plain love deviled eggs and smoked salmon, so I thought I would combine the two. I hope you will enjoy this recipe!


12 hard boiled eggs – cooled and peeled

1 to 2 tablespoons olive oil

2 tablespoons fresh lemon juice

4 teaspoon Dijon mustard 1 tablespoon 1/3 less fat cream cheese

8 tablespoons minced smoked salmon*

2 minced green onions 2 teaspoons coarse chopped capers

Salt & pepper – to taste

Smokey paprika, not hot (optional) Fresh chives cut on the diagonal


Cut peeled eggs in half length wise and place yolks in a mixing bowl; set the whites aside. Mash the yolks with the back of a fork and add olive oil, lemon juice, Dijon, cream cheese, smoked salmon, and green onions, chopped capers. Mix well and add salt and pepper to taste. Pipe or spoon the filling back into egg whites. Garnish with a sprinkle of paprika and top with chives. Cover and refrigerate one hour before serving.
