Quake Kits: Recipes For Survival

Surviving a disaster requires a way to keep eating.  Families who are stranded can use this shopping list and menus to create a disaster-recovery box.   Feed four people over a four-day span, and prepare on a backyard grill, with no more than one gallon of cooking water per day.

This earthquake-inspired idea for cost-effective survival cooking comes easily to members of The Chefs de Cuisine Association of San Diego, which has a half-century history of serving and giving cuisine to all kinds of community groups and charities.

SHOP, STORE, SURVIVE:

Canned Items:

  • Chicken - 4 cans
  • Baby Corn - 1 can
  • Green Beans - 3 cans
  • Bamboo Shoots - 1 can
  • Cream of Mushroom Soup - 2 cans
  • Vienna Sausage - 2 cans
  • Chili Sauce - 2 cans
  • Mixed vegetables - 2 cans
  • Cream of Chicken soup - 2 cans
  • Canned turkey - 2 cans
  • Enchilada Sauce - 1 can
  • Red Beans - 2 cans
  • Tomato Sauce - 1 can

Dried Items:

  • Pancake mix - 1 box
  • Chowmein noodles - 1 pkg
  • Spaghetti noodles - 1 pkg
  • Breakfast cereal
  • Penne Pasta - 1 lb
  • Rice - 2 cups
  • Cream of Wheat
  • Rigatoni pasta - 1 lb
  • Pinto Beans - 1 lb

 Liquid/pouch Items:

  • Maple syrup - 1 bottle
  • Cooking oil - 1 bottle
  • Soy milk -2 boxes
  • Tuna - 2 pouches
  • Teriyaki Marinade - 1 bottle

YOUR DISASTER KITCHEN:

  • Your backyard barbeque, or a butane-powered portable stove and butane cartridges (7.8 oz. ea)
  • Supplier: Butane Sunmax

Saucepans:

  • 1 qt. saucepan with lid
  • 1.5 qt. saucepan
  • 2.5 qt. pot with lid

Utensils:

  • 9" spoon
  • 9" fork
  • 9" spatula
  • Manual can opener
  • Biodegradable dish soap
  • Bowls, flatware, dish towels
  • Survival Menus for the next disaster:

Day 1:

  • Breakfast: Cereal with Soy milk
  • Lunch: Tuna Casserole: 2 Pouches Tuna, Penne pasta, 2 cans Cream of Mushroom soup
  • Dinner: Red Beans & Rice w/ Sausage: Red Beans, Rice, Chili Sauce, 1 can Vienna sausage, 1 can mixed vegetables

Day 2:

  • Breakfast: Pancakes with Syrup, oil
  • Lunch: Chicken Stir fry: 2 cans Chicken, chow mien noodles, teriyaki marinade,canned corn, green beans, and bamboo shoots
  • Dinner: Spaghetti with Sauce

Day 3:

  • Breakfast: Hot Cereal with Soy milk
  • Lunch: Chicken Casserole: 2 cans Turkey, 2 cans Cream of Chicken soup, 1 lb. Rigatoni pasta, 1 can green beans
  • Dinner: Chicken Chili & Beans: Pinto Beans, enchilada sauce, 2 cans chicken

Day 4:

  • Breakfast: Pancakes w/ Syrup, oil
  • Lunch: Spaghetti w/ Tomato Sauce
  • Dinner: Red Beans & Rice w/ Sausage: Red Beans, Rice, Chili Sauce, 1 can Vienna sausage, 1 can mix vegetables
