Grilling with Styles: Grilled Pork with Margarita Salsa

2-3 pounds of Pork, you can use chops or lion
2 limes juiced
1/4 cup canola oil
2 oz. Triple sec
big pinch crushed red pepper
kosher salt


1 lb. tomatillos, cleaned
1 yellow bell pepper
1 Haas avocado, diced
1 lime, juiced
1/4 cup diced red onion
1/4 cup chopped cilantro
2 serrano chile, minced
extra virgin olive oil
Kosher salt
fresh ground black pepper


For the pork combine all ingredients for marinade, give the meat at least an hour two is better. Over med-high open flame grill pork to the temperature you prefer. Remove from grill and top with salsa that has been made in advance.


Toss tomatillos and bell peppers with oil, salt and pepper. On med-high heat grill tomatillos about 5-7 minutes, enough to put grill marks on them, remove and cool. Peel and seed peppers and dice. Cut tomatillos into bite size pieces. Combine all ingredients, season with salt and pepper to taste.
