Grilling with Styles: Soy-Glazed Flank Steak with Scallions

3 lb. flank steak
3/4 cup dry sherry
1/2 cup low sodium soy sauce
1/2 cup honey
3 tbs. vegetable oil
1 large clove garlic, minced
2 tsp fresh ginger grated
Pinch of red chili flakes

Salt and pepper for seasoning
2 or 3 bunches of scallion, cleaned and trimmed


Combine first eight ingredients in a large bowl and marinade meat for 2 hours at room temperature. Remove meat from marinade and place marinade in sauce pot, cook over medium heat until sauce becomes a syrup. Grill meat over a medium high heat open flame to preferred temperature, remove and let rest before slicing.

While you wait toss your scallion with oil and season with salt and pepper. Place them on the grill about 1 - 2 minutes, just long enough to get them to wilt. Now you can slice your steak across the grain, drizzle the glaze on top and serve with the scallions on the side
