The Dish with Anita: Lemon simple syrup

SAN DIEGO (CBS 8) - Flavored simple syrups are a great way to flavor and sweeten mixed drinks and club soda or tonic water. You can use orange zest, lime zest great for mojitos, or ginger simple syrups can also be used to add moisture and flavor to cakes after baking. Enjoy!

Ingredients:

2 cups sugar

2 cups water

Zest from one lemon (just the yellow part)

3/4 cup fresh lemon juice

Instructions:

Place sugar, lemon zest and water in a sauce pan and bring to a rapid boil. Once sugar has dissolved, remove pan from heat, let cool slightly then stir in lemon juice. Let cool completely. Pour through strainer to remove solids. Pour into clean bottles or jars.

Store in the fridge (keeps up to 4 weeks).
