The Dish with Anita: Grilled lobster with garlic butter sauce

Posted: Updated:

SAN DIEGO (CBS 8) - This is for my fellow seafood grillers. This can be prepared on an indoor grill as well with great results you can also use jumbo prawns in place of the lobster, served with grilled corn and some crusty bread (for sopping up that garlic sauce!)

2 to 3 whole split lobsters, cleaned (or split lobster tails)

1 stick soften butter

2-3 lrg cloves garlic smashed or 2 tsp store bought garlic paste

1/2 tsp kosher salt or sea salt

1/4 tsp fresh black pepper

2 tbsp fresh chopped herbs of your choice (I recommend Italian parsley, chives and Basil)

Lemon wedges

Place butter, garlic, salt, pepper and fresh herbs in a bowl and use a rubber spatula to mix until all ingredients are combined. Place in microwave and heat just until melted but not runny.

Once your grill is hot, add the claws only and cover. Cook for 3 minutes. Next, add the lobster bodies, shell-side up, cover and grill for 3 minutes. Turn the lobster bodies and the claws over, brush or spoon the garlic-butter all over the inside of the lobster. Cover with a piece of foil and cook for 6 to 8 minutes. Placing the foil on top allows the garlic sauce to really penetrate the meat, depending on the size of your lobsters (one 3/4-pound lobster split takes about 6 minutes to cook).

Remove from grill, brush with additional garlic butter if desired and a light squeeze of lemon juice before serving is recommended. Serve hot.
