SAN DIEGO (CBS 8) - This recipe for BBQ spare ribs is something I came up with after my coals burned out before the ribs where done. Rather than adding more coals and waiting for them to be ready, I preheated my oven to 350 degrees and finished cooking the ribs in the oven and let me just say they where FABULOUS! I think I will cook them this way from now on; they had a wonderful smoky barbequed flavor and they where juicy.
Another plus to cooking them this way is the sauce develops this sweet, sticky quality without burning. This is by far one of the best rib recipes you will try. Just remember to use a really good dry rub on the ribs, let them sit in the refrigerator overnight and finish the ribs with a really good quality BBQ sauce such as Geno's Hot BBQ sauce.
Just make sure you buy plenty of ribs, because once your family and guests try these ribs they'll be back for more!
2 to 3 slabs of pork spare ribs
Store bought dry rub of your choice
Brown sugar (you decide how much)
2 cups Geno's Hot BBQ sauce
1 1/2 cups no added sugar apple juice or water
Wash and pat dry slabs of ribs, trim off excess fat. Be careful not to remove too much since this is where the flavor comes from. Next, rub the front and back with a generous amount of dry rub. Once ribs are completely coated sprinkle brown sugar on both sides. Wrap tightly in plastic wrap, place in a pan and put in the fridge for no less than 24 hours (the longer the meat marinates, the better it will taste).
Prepare coals on outdoor grill; do this by lighting your coals in the center of the pit. Once the coals are completely lit they will be gray. Spread out to an even layer. You should start cooking the ribs when you can hold your hand over the coals for no more than 5 to 6 seconds.
Place ribs on grill and cook for about 10 to 15 minutes each side. In a small bowl, combine sauce with juice/water. Remove ribs from grill and place meaty side up on a foil-lined baking sheet sprayed with non-stick cooking spray. Brush top of meat with glaze and place in 350 degree preheated oven for 30 minutes, half way through using tongs, turn ribs over and apply another coat of glaze and continue cooking.
During last 10 minutes of cooking flip ribs over and give final coat of glaze. Remove, place on a cutting board and let rest for a few minutes before cutting and serving.
