2 cups Orzo pasta
1 pint plum or cherry tomatoes
1/2 cup extra virgin olive oil w/ a little extra to coat tomatoes
1/4 cup balsamic vinegar
1/4 cup diced red onions
2 cloves garlic, chopped
1 tbsp dried oregano
1/4 cup chopped fresh basil leaves
1/3 cup Parmesan cheese
Salt and freshly ground black pepper
Cook pasta according to direction, rinse, drain and set aside. Soak skewers in water for an hour before using. Slide tomatoes on to skewer, drizzle with oil, season with salt and pepper and then grill over medium heat. Be sure to pay attention not to over cook, once tomatoes are done remove from skewer and in a separate bowl combine the other ingredients, now gently fold in tomatoes, top with Parmesan cheese and your ready to serve.
