1 yellow bell pepper
1 red bell pepper
1 green bell pepper
1 lb. Monterey Jack cheese, grated
1 bottle of Italian dressing or make your own
1 jar Pepperoncinis
olive oil
kosher salt & fresh ground pepper

2 tbsp kosher salt
2 tbsp onion powder
2 tbsp garlic powder
2 tbsp light brown sugar
1 tbsp Ancho chili pepper
1 tbsp ground white pepper
1 tbsp ground black pepper
1 tbsp dry mustard
1 tsp ground cumin

Combine rub ingredients, drizzle steak, chicken or shrimp with oil and season with rub, set aside. Peel and clean onions and bell pepper, slice onions thick and quarter peppers, coat with oil and season with salt and pepper. Now your ready grill, over medium high heat, do your veggi's first then your protein, let your beef rest for 5 minutes before slicing. while you wait chop your onions and peppers into bit size pieces. Now we can assemble, cut the baguette down the middle but not in half, splash the inside with the Italian dressing, place the beef or chicken or shrimp in, next is the peppers and onions and then top with cheese. You've moved the coals to one side of the grill, now put your California Cheese Steak on the other, close the lid just long enough to melt the cheese. Remove, slice on an angle, top with Pepperoncinis and serve.
