3 lbs. of Steak, your choice or Chicken breast or Jumbo Shrimp
2 or 3 large sweet onions
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
1 lb. Monterey Jack cheese, grated
1 bottle of Italian dressing or make your own
1 jar Pepperoncinis
kosher salt & fresh ground pepper
Dry Rub Ingredients:
2 tbsp kosher salt
2 tbsp onion powder
2 tbsp garlic powder
2 tbsp light brown sugar
1 tbsp Ancho chili pepper
1 tbsp ground white pepper
1 tbsp ground black pepper
1 tbsp dry mustard
1 tsp ground cumin
Combine rub ingredients, drizzle steak, chicken or shrimp with oil and season with rub, set aside. Peel and clean onions and bell pepper, slice onions thick and quarter peppers, coat with oil and season with salt and pepper. You've moved the coals to one side of the grill, now put your California Cheese Steak on the other, close the lid just long enough to melt the cheese.
