The Dish with Anita: Banana bread

SAN DIEGO (CBS 8) - This is one of my favorite banana bread recipes. The addition of dark chocolate chips makes this bread even better. Enjoy!


1 cup plus 2 tbsp each- whole wheat flour, all-purpose flour

1 tsp each - baking powder, baking soda, salt

1/4 cup each- unsalted butter r/t, light olive oil

1/2 cup each- brown sugar, white sugar

2 large eggs r/t

3 to 4 very ripe bananas

1 tsp cinnamon

1 tsp vanilla extract

2 tbsp buttermilk

3/4 cups each- *chopped pecans, dark chocolate chips


Preheat oven to 325 degrees.

Spray a loaf pan with non-stick cooking spray set aside.

Place all of the flour except for two tablespoon in a mixing bowl. Add baking powder, soda and salt. Stir with a wire whisk to aerate.

Place bananas in a small mixing bowl and mash with a fork until smooth (a few lumps are okay). Stir in cinnamon, vanilla extract and buttermilk and set aside. Place butter, light olive oil and sugars in a mixing bowl. Using a hand mixer beat until completely blended. Add eggs one at a time, making sure each egg is incorporated before adding the next. Combine the banana mixture with the butter mixture and stir until completely mixed, then add the dry ingredients by hand with a wooden spoon or rubber spatula and stir until the flour completely disappears. Toss the chopped nuts (if using) and chocolate chips with the remaining two tablespoons of flour then fold into batter.

Pour batter into loaf pan place in preheated oven and bake for one hour or until done. Test with a toothpick by inserting into center of the bread. The toothpick should come out clean when bread is done. Remove from oven and let cool somewhat. Can be served warm or cold.

Cooking Tip:

*Omit nuts and chocolate chips for people with nut allergies.
