
SAN DIEGO (CBS 8) - This is a great recipe for potlucks in particular Super Bowl potlucks and if you like Buffalo wings then you might want to give this shredded Buffalo chicken sandwich a try.
I like -- no make that LOVE -- Buffalo wings, but don't too much care for the mess of eating them, so I thought making a chicken sandwich inspired by Buffalo wings would be the solution. This recipe is made super easy by using a store-bought roasted chicken. It can also be made a day ahead and reheated just before serving.
You can serve it on hoagie rolls or mini rolls -- think Buffalo chicken sliders. Or for those of you on a low-carb diet, place the shredded Buffalo chicken on a bed of chopped iceberg lettuce, shredded carrots, chopped celery and serve with blue cheese dressing on the side Any way you serve it, it's sure to be a crowd pleaser. Enjoy!
Ingredients:
1 whole roasted deli chicken
2 3/4 cups Frank's Red Hot Sauce*
4 tbsp butter (1/2 stick)
1/4 cup chicken stock
1 package Hidden Valley buttermilk ranch dressing mix
1/2 tsp each - black pepper, onion and garlic powder, cayenne pepper
Instructions:
Remove skin from chicken. Debone chicken and shred meat by hand or with two forks. Place in a bowl and set aside.
In a large pot, combine remaining five ingredients and heat to medium high. Once butter has melted, reduce to simmer. Remove 1/2 cup of the sauce and set aside.
Add shredded chicken and stir to combine. Cover with lid and let simmer on low for 15 to 20 minutes just to make sure flavors incorporate. Serve hot on rolls with blue cheese spread and reserved Buffalo sauce. Can be kept warm for serving buffet-style in a Crockpot set on low or warm.
Blue Cheese Spread
Ingredients:
1 small container whipped cream cheese
1/2 cup of your favorite blue cheese dressing
1 tsp lemon juice
1/4 tsp dried thyme
1/2 tsp coarse ground black pepper
Pinch of sea salt
1/8 tsp cayenne pepper
1/2 cup good quality blue cheese crumbles
Instructions:
Place everything but the Blue cheese crumbles in a mixing bowl stir until smooth, gently fold in crumbles try not to break the crumbles up too much
This can be used as a dip or spread.
