Memorial Day Grilling with Styles: Grilled lemon chicken cutlets

Ingredients:

4 breast of chicken
3 to 5 lemons
1 bunch Italian parsley
1 cup extra virgin olive pil
Kosher salt
Black pepper

Directions:

You will be grilling boneless, skinless breast meat so however you get here is fine. Remove the tender and then split the breast lengthwise as to make cutlets. Zest the lemon rinds and set aside. Chop the stems of the parsley and juice 3 of the lemons into a non-reactive pan. Add 1/2 cup of olive oil, salt and pepper and mix to bring the ingredients together, add you chicken and marinade for at least 10 minutes but no more than an hour. Over medium hot coals grille the chicken 4 - 5 minutes per side, taking care not to over cook. In a separate bowl mix the remaining olive oil, the juice from 1 to 2 lemons, 2 pinches of lemon zest and chopped parsley tops. Pour over your chicken and serve
