Memorial Day Grilling with Styles: Grilled pepper sirloin salad

Ingredients:

2 pound lean and trimmed top sirloin
2 heads radicchio, chopped
4 head Belgian endive
1 cup extra virgin olive oil
1/4 cup balsamic vinegar

Rub:

1 tsp ancho pepper
1 tsp black pepper
1 tsp white pepper
1 tsp paprika
1 tsp granulated garlic
1 tsp granulated onion
1 tbsp brown sugar
2 tbsp kosher salt

Directions:

Mix rub ingredients and set aside. Prepare coals for grill, while the coals get hot chopped the radicchio and endive, rinse and chill in the refrigerator. Trim sirloin, lightly rub with a 1/4 cup of olive oil and the season with rub to the level of spice you prefer. Place steak over moderately hot coals cooking to medium rare. While the meat cooks mix together the remaining olive oil and balsamic vinegar and just before you serve toss with the radicchio and endive. After letting the meat rest for 5 minutes slice thinly and serve over the steak, lightly dust with the rub mixture and present.
