SAN DIEGO (CBS 8) - This is a great salad as an entree, or side with your favorite grilled meat. Enjoy!
1/2 head of each iceberg lettuce, butter lettuce chopped or torn
4 oz. pepperoni, diced (if using sliced you'll have to eyeball it)
4 oz. mortadella, diced
1/2 red onions, diced or thin sliced
1 oz. provolone, diced
2 to 3 Roma tomatoes, seeds removed sliced divided
1 cucumber seeded, sliced
1 oz. gorgonzola, crumbled
1 oz. feta cheese, crumbled
1/2 oz. pepperoncini, chopped
1/2 teaspoon oregano
3 1/2 to 4 oz. good qualities Italian red wine vinaigrette dressing, divided in half
4 whole or sliced pepperoncini
Pitted black olives, as many as you like
Pitted green olives, as many as you like
Place the lettuce, pepperoni, mortadella, red onion, and provolone, 1/2 of tomato slices, cucumbers, gorgonzola, feta, chopped pepperoncini and oregano into a mixing bowl. Toss gently.
Add 1/2 of the dressing and toss again until fully incorporated. Mound salad mixture on a chilled plate, getting as much height as possible. Place the remaining tomatoes around the outside of the salad. Garnish with whole pepperoncini and olives and serve.
