CARLSBAD (CBS 8) - This Saturday, one of the most unique concepts in lunch counter cuisine will be unfolding in Carlsbad. At Boxd, a recycled shipping container hoisted in from the docks of Long Beach converts to a completely functioning, full-service restaurant with a flick of the wrist.
"You just turn the key and in a matter of minutes, we're open," John Ray said.
The entire café is powered by hydraulics.
"They run on vegetable oil and they are all self-contained in the doors, and that causes it to go up and down," John said.
Located on State Street in Carlsbad Village on a lot that had been vacant for 30 years, Boxd is already creating buzz before it's officially unfurled.
"I like to say even though we're not open yet, we're already the coolest place in Carlsbad," John said.
The menu here is equally inventive.
"We take just one waffle and we'll spread whatever it is, our toppings, fold it, put it in a pouch and it's ready to go," John said.
There's no waffling with the prices at Boxd. Nothing on the menu is over $7. And waffles aren't just for breakfast anymore.
Starting Saturday, much to the delight of the locals, Box'd will no longer be able to contain itself.
