
SAN DIEGO (CBS 8) - This is a great summer salad that is easy and requires no cooking! It can be made with or without seafood and served as a side dish or light supper. Enjoy!
Ingredients:
2 large firm California Haas avocados, cut into chunks
2 tbsp fresh lime juice
4 to 6 oz each - cooked med/lrg shrimp, lump crab meat
1/2 cup halved grape tomatoes
1/4 cup chopped red onion
1/2 cup Persian cucumber cut into chunks
2 tbsp cilantro
1/4 cup each - Greek yogurt, light Italian dressing
Instructions:
Place Avocado chunks into large glass mixing bowl add lime juice gently toss to coat add remaining five ingredients set aside, in a small mixing bowl combine Greek yogurt and Italian dressing if to thick add a little more dressing to thin, pour over ingredients in large mixing bowl gently toss taking care not to over mix place on frig to chili 15 minutes or so before serving.
