This recipe of the week was forwarded to me by my friend Debbie. If you or your children have severe nut allergies, you know how hard it can be to find nut free recipes and prepared foods that they can have. This a very good example of a very tasty nut free pesto sauce that can be enjoyed by those with nut allergies without worry, enjoy!
3 cups fresh basil leaves
2 to 3 cloves garlic
¼ to ½ cup fresh grated good quality parmesan cheese
Splash of fresh lemon juice
1/2 cup olive oil
Sea salt and fresh ground pepper to taste
In a food processor or blender, chop garlic until it is minced.
Add in the basil leaves and parmesan cheese and start to blend. Slowly drizzle in the olive oil while the food processor/blender is running. Blend until smooth.
Squeeze in a little lemon juice and add salt and pepper to taste.
Use on pasta, chicken or fish
Store any unused portion in refrigerator for up to one week or in freezer up to one month
