Grilling with Styles: Moroccan Mint Couscous Salad

Ingredients:

2 cups chicken broth
12 oz. couscous
1/2 cup olive oil, plus 2 tbsp
2 tbsp red wine vinegar
1/2 tsp Dijon mustard
1 cucumber peeled, seeded and diced
3 roma tomatoes, diced
1/4 cup diced red onion
1/2 cup Italian parsley, chopped
1/4 cup mint, chopped
Salt & pepper

Directions:

Bring chicken broth to a boil with 2 tbsp of olive oil, pour in couscous, cover with lid for 5 minutes and let stand. Fluff with fork until separate. In mixing bowl combine the rest of the olive oil, Dijon mustard and vinegar and whisk, season with salt and pepper, add cucumbers and tomatoes and toss. Now in a large mixing bowl bring together your couscous, cucumbers and tomatoes with vinaigrette, mint and parsley and toss. Taste and adjust seasoning with salt and pepper.
