Grilling with Styles: Grilled Pineapple w/ Vanilla Ice cream and a Rum sauce

Ingredients:
1 pineapple
1 quart vanilla ice cream
1 cup brown sugar
3 tablespoons butter
1 orange, juiced
1/4 cup rum
Triple Sec
toasted coconut

Directions:
This can be prepare over the open flame on the grill. In large cast iron skillet combine brown sugar and butter until melted, then add orange juice and simmer until reduced by one quarter, set aside.

Clean pineapple and cut into serving size wedges, brush with Triple Sec and grill at a high heat just long enough to mark. Return sauce to heat, add Rum and cook off alcohol. Scoop ice cream into bowl with Pineapple cover with sauce and top with toasted coconut.
