Bottega Italiana: All you need to know about gelato

SAN DIEGO (CBS 8) - In Italy, gelato is almost a sacrament. It is the focal point of many communal gathering, a sweet moment in time to be savored.

"Gelato is such a cultural popular item. It's a pastime, a meeting point. It's a huge part of the food culture in Italy," David Arato said.

It's that kind of passion for the process that David infuses into his products at Bottega Italiana. He served as an apprentice for one of Italy's top gelato makers.

"I also attended Gelato University in Bologna," he said.

Armed with a degree and a quest for authenticity, David has been driven to open Bottega Italiana in UTC to compliment the shops his already owns in Seattle and Coronado.

"We, unlike many ice cream and gelato spots, we at Bottega Italiana make it out of scratch," he said.

So when David makes his famous watermelon mint, he starts with the mouth-watering fruit.

"You need to taste the fruit, because it alters the recipe," he said.

Some dextrose to sweeten, and a little squeeze of lemon.

"Just to enhance the flavor," David said. "Another big thing that I like to do in the summertime is add mint leaves."

Next, the ingredients are blended and set into a machine that cooks it on top and freezes it on the bottom. The results are a seasonal, mouthwatering authentic treat.

"It is a good 60 percent less in fat and calories, than American ice cream would be. It is a lot healthier and a lot lighter. Again rich in flavor, less air whipped into it as well," David said.

One bite and you'll discover why Italians are so passionate about their gelato, a moment in time when your taste buds are consumed by a rich and rewarding heritage.
