Napizza: A healthy slice of gourmet pizza

SAN DIEGO (CBS 8) - It's midday at Napizza in 4S Ranch. Here, two gentleman from Verona and two folks from Ramona are sampling some authentic downtown Roman-style pie.

"We levitate our dough for 72 hours, and this allows us to use very little yeast in our dough and it breaks down the sugars. Therefore, it's much lighter dough, crisper," Gullia Colmignoli said.

So when in 4S Ranch, do as the Romans.

"Our goal from the beginning is really make this as authentic as possible as we have in Rome," Gullia said.

After making an initial splash in Little Italy, Napizza sailed off into the 'burbs, into an area who's economic good fortunes and missteps have earned it nicknames like the "Mellowist Roos" and "Foreclosure Ranch." It's a question of balance and contrast.

"Families here are very concerned on nutritional value, good eating, healthy. We try to keep it colorful with a lot vegetables and a lot of good ingredients," Gullia said.

Napizza does offer a dazzling display of their daily faves in a mix-and-match batch.

"You can get any six slices, mix it anyway you'd like," Gullia said.

Or you can cherry pick a couple of your faves from case.

Salads too are handcrafted to accompany the authentic Roman pizza party.

"We make all our dressings in-house," Gullia said.

Napizza brings with it all the necessary ingredients for success -- a time-tested product, tweaked to restore tradition without sacrificing nutrition. Or could it just be one of the final shreds of lettuce from the Roman Empire?
