Grilling with Styles: Grilled Pork or Chicken with Jamaican Jerk Rub

Ingredients

1 sweet onion, chopped

1 1/2 teaspoons dried Thyme

1 teaspoon ground Allspice

1/2 teaspoon ground Cinnamon

4 teaspoons White Pepper

1/4 cup chopped Green Onion tops

1/4 teaspoon ground Nutmeg

3 small jalapenos

2 tablespoons cooking Olive oil

Splash of Spiced Rum

Kosher salt & Black pepper

Directions

Combine all ingredients in a food processor and pulse to get a medium smooth blend. Rub meat down, cover plastic and refrigerate over night for best result.

Set grill for a medium heat, allow meat to get close to room temperature before grilling. Season chicken or pork with salt and pepper before placing on well oiled grill. Turn often for browning and to prevent burning, cook to desired temperature. Remove from grill and allow meat to rest 10 minutes before slicing. When ready to serve top with Caribbean Salsa.
