Students harvest ingredients for local restaurant

SAN DIEGO (CBS 8) - Students from Washington Elementary are helping a local restaurant put food on the table. 

You can see how the Good Neighbor Gardens program is making a difference in San Diego County when it comes to making sure less food is wasted as CBS News 8's Ashley Jacobs spends the morning harvesting vegetables with the kids. 

Here is the recipe they followed to make a delicious meal on CBS News 8 This Morning:

Dish Recipe: Gratitude ReSource Panzanella Salad

Toss together in a large bowl:

  • 1 one-day old baguette, preferably sourdough cut into 1-2 inch cubes, tossed with olive oil, salt, chopped garlic and dried oregano and toasted in a 350 degree oven on lightly crispy.
  • 1 pint heirloom cherry tomatoes, halved
  • 4 cups mixed seasonal greens such as arugula, spinach, heirloom lettuces, pursulane

Make a light dressing, whisk together:

  • 1/3 cup apple cider vinegar
  • 2/3 cup extra virgin olive oil
  • 1 tsp himalayan or applewood smoked salt 1 Tablespoon honey or sweetener of choice 1/2 tsp black pepper.
  • Lightly dress the salad greens, tomatoes and toasted bread.

Garnish with:

  • Chunks of Cashew Mozzarella or a regular dairy boccocini di mozzarella
  • Brazil Nut Parmesan or other dairy or non-dairy parmesan cheese
