Family-friendly summer recipes

SAN DIEGO (CBS 8) - Summer is here and many of you will fire up the grill! But you don't necessarily have to go outside!

Chef Jeff Anderson with Albertsons companies has summer recipes that include kid-friendly options from "grilled chocolate sandwiches" to "avocado toast."

Here's a look at some of those summer recipes:

2 tablespoons unsalted butter, softened
1/2 loaf Signature SELECT Artisan French Baguette
1/2 cup Signature Kitchens chocolate chips


Preheat oven to 350°F. Split baguette lengthwise and spread interior surface of bread with butter. Heat 12-inch skillet over medium heat, and place bread, butter side down, on the pan. Toast until crisp. Turn bread over, add chocolate and fold halves together. Place pan in oven and toast for 3-4 minutes or until chocolate is melted. Remove from oven and press the bread slightly to compress the sandwich together. To serve, cut on the bias. Makes 1 large sandwich or 3 mini sandwiches

Signature SELECT Artisan French Baguette, sliced lengthwise and toasted
2 tablespoons Signature SELECT Extra Virgin Olive Oil
Ripe Hass avocados
Pinch of Kosher salt
Pinch of freshly ground black pepper
Signature SELECT uncured bacon; cooked
Fresh lemon wedge


Toast baguette using toaster, broiler or oven. Drizzle with olive oil. Top with sliced avocado and season with salt and pepper. Top with crumbled or slices of bacon and a squeeze of lemon wedge.
