Shawn Styles: Labor Day grill recipes

Grill seasoning mix

2 tbsp Kosher salt

1 tbsp granulated Onion

1 tbsp granulated Garlic

1 tbsp Black Pepper

1 tbsp Paprika

1 tsp dried Parsley leaf

1 tsp Red Pepper Flakes

For a savory mix, add 1 tbsp Espresso and 1 tbsp brown Sugar. Combine all ingredients in mixing bowl and season to taste. Save leftover in container for later use, can be store as you would any other seasoning.

This mix works great on just about anything you'll put on the grill. With lighter proteins or Veggies use less, with denser meats use more. I like to add the Espresso and brown Sugar on beef, lamb and pork.

Grilled Sweet Corn Salsa

1 cup diced Roma tomato

1 cup fresh White Corn off the husk

1/2 cup diced Red Onion

1/2 cup diced Avocado

1/3 cup chopped Cilantro

1/2 Jalapeno, seeded and minced

1/3 cup Olive oil

juice from 1 Lime

Salt and Pepper to taste

Husk 2 ears of corn, rub with olive oil and season with salt and pepper. Place corn on hot grill just long enough to start to char some of the kernel's, remove and let cool. Once cooled slice the kernel's off the cob and combine all ingredient except the Jalapeno, salt and pepper. Add half of the Jalapeno's and season with salt and pepper, taste to decide if you need more heat.

Grill fruit with a Yogurt Honey Lime sauce

Any type of fruit, Pineapple, Nectarine, Peaches or any Stone fruit.

2 tbsp Olive oil

large pinch of Kosher Salt

2 cups plain Yogurt

1/4 cup of Honey

juice of 1 Lime

Just from any firm fruit will work, just be sure that it not quite ripe. Mix yogurt, honey and lime juice and place in refrigerator. Slice the fruit into serving size pieces, toss with olive oil and salt and place on hot grill just long enough to put marks on. Remove and serve with yogurt sauce.
