Fruit ingredients:

6 peaches, peeled and sliced

1 tbsp lemon zest

2 tbsp lemon juice

1/2 cup granulated sugar

1/4 cup rice flour

1 cup blueberries

Crumble ingredients:

1/2 cup quick cooking oatmeal

1/2 cup rice flour

1/3 cup sugar

1/4 cup brown sugar

1/2 tsp kosher salt

1/4 tsp ground cinnamon

1 stick unsalted butter, melted

1 quart vanilla bean ice cream


Combine fruit ingredients in a bowl, and then transfer to a non reactive frying pan. Next combine the crumble ingredients in a bowl then sprinkle them on top of the fruit. Now place on the medium temperature grill but not over direct heat. Close the grill and in about a 35 to 40 minutes it should be done. You can also do this in an oven at 350 degrees for about the same time. Either way, it should be bubbling. Remove from heat and let the crumble cool until it's warm. Dish it up with a scoop of ice cream and dig in!
