Gluten-free, vegan chocolate chip cookies

SAN DIEGO (CBS 8) – This is an adaptation of an original recipe, made to be dairy-free, egg-free, gluten-free and contain no animal products. You'll never know these fluffy cookies are vegan and contain no gluten!

Ingredients*:
½ cup Earth Balance
1 cup brown sugar
½ cup granulated sugar
1 banana, mashed
2 tsp vanilla extract
2½ cup gluten free all purpose baking flour
½ tsp Xanthan Gum
1 tsp baking soda
2 tsp cornstarch
8 oz gluten-free, dairy-free chocolate chips 

*All of the ingredients were purchased at Vons; most major grocery stores now have gluten-free sections

Instructions:
Preheat the oven to 325. If your Earth Balance is not room temperature, place it in the microwave for 5-8 seconds. It is softer than butter, so any longer will melt it too much. It is soft enough to cream by hand.

Cream together the Earth Balance, brown sugar and granulated sugar.

In a separate bowl, mash one banana until it is the consistency of an egg. Add the banana and vanilla with the sugar-Earth Balance mix.

Stir in the flour, xanthan gum, cornstarch and baking soda. Once thoroughly mixed, add the chocolate chips. (Any chocolate chips can be used for this recipe but many contain milk so read the ingredients). Drop by tablespoon on a cooking sheet or roll by hand.

Bake 16-18 minutes and enjoy!
