SAN DIEGO (CBS 8) - This is my take on what to do when you only have bits and pieces of ingredients for several different cookie recipes -- you make Oatmeal Super Cookies!!! I was very happy with the finished product. Enjoy!
1/2 cup each –unsalted butter, Crisco
3/4 cup each – white sugar, dark brown sugar
2 tsp vanilla extract
1 tbsp pumpkin pie spice mix
3 lg eggs
1 1/4 cup all purpose flour
1 tsp each-baking powder, baking soda, salt
1/2 cup each -- raisins, dried cranberries, slivered almonds, coconut
3 cups Quaker old fashioned uncooked oats
Preheat oven to 350 degrees.
In the bowl of an electric mixer place butter, sugars and vanilla extract and beat until creamy, add eggs one at a time, making sure to completely mix before each addition. Stir together flour, salt, baking powder and baking soda. Set mixer on low speed and add flour mixture a little at a time, making sure to scrape down sides periodically. Once all the flour is incorporated add the raisins, dried cranberries, almonds and coconut. Mix completely, then add oats. Drop by spoon portions of cookie dough onto cookie sheet and space about an inch apart, flatten slightly. Bake in 350 degree preheated oven for 10 minutes for soft, chewy cookies, and two to three minutes longer for a crunchy cookie.
